currently mp4 only works if you compile ffmpeg yourself so enabling it by default will not just work.
it might be possible to use the aac encoder that is in ubuntu 12.04 but that requires changes to the encoding profiles and testing.

So we should somehow document that the pan.do/ra default config does not support Safari...
